Kitchen display system: what a KDS actually changes
A kitchen display system replaces the printer spitting tickets with a screen showing orders. That sounds like a cosmetic change and mostly isn't — the difference is that a screen knows what time the ticket arrived, which station owns it, and whether anyone has touched it. Whether that's worth a screen in your kitchen depends on things worth being specific about.
What a paper ticket can't do
- It doesn't know it's late. A ticket sitting for 22 minutes looks exactly like one from 90 seconds ago. A KDS colours it.
- It can't be in two places. A table ordering starters and a dessert needs the ticket at the cold station and the pass. Paper gets torn or copied.
- It disappears. Tickets fall behind the line, get greasy, get stuck to something. The order is simply gone.
- It doesn't tell you anything afterwards. You cannot answer "how long did we take on Saturday between 21:00 and 22:00" from a spike of paper.
- It needs a printer that works. Thermal printers jam, run out and die at the worst moment.

The measurement is the underrated part. Once every ticket has a start and a bump time, you can see that Friday's average is fine but that the 21:15 wave takes eleven minutes longer — and that's a staffing decision you can actually make.
The hardware question
Purpose-built KDS units — sealed screens with a bump bar, rated for heat and grease — are excellent and expensive. A high-volume kitchen with a fryer two metres away has a reasonable case for one.

When you should not get a KDS
Be honest about this. A kitchen with two people where the person taking the order can turn around and say it out loud does not need a screen — you'd be adding a step. The same goes for a venue doing 20 covers a night with a fixed short menu.
The threshold is roughly where a single person can no longer hold the state of the pass in their head: multiple stations, orders arriving from more than one channel (floor, QR ordering, takeaway), or more than about 40 covers a service.
Setting one up without disrupting service
- Run it alongside the printer for a week. Both fire, nobody panics, staff learn the screen without risk.
- Start with one screen at the pass. Station-by-station routing is a second-week problem.
- Agree what "bump" means before you start — plated, or handed to the floor? Half the confusion in the first month comes from this.
- Mount it where a chef with wet hands can reach it and where steam won't sit on it.
- Turn the printer off once a full week has passed without anyone reaching for it.
What to look at once it's running
Three numbers earn their keep. Median ticket time tells you the normal. The 90th percentile tells you how bad your bad tickets are, which is what guests actually remember. Ticket time by hour tells you when to add a person. If your median is steady but the 90th percentile is double it, the problem is usually one dish or one station, not the whole kitchen.
